Ingredients (3 persons):
3 Eggs2 Slices of prosciutto separate into small pieces10-15 Arugula leaves 1/2 Tbsp butter (optional)Parmesan cheeseSalt to taste
How to prepare:
1. Fry the prosciutto on a pan until crisp.
2. Beat the eggs, cook on a nonstick pan and scramble. Add salt to taste. You can add butter at the end of the cooking for a creamier and velvety texture.
3. Place eggs on a plate. Sprinkle the prosciutto and arugula on top.
4. Grate parmesan cheese on top for garnish.
