Cilanto-Lime Chicken with Avocado Salsa
A 3- to 5-minute dip into a pungent marinade is all it takes to deliver big flavor to chicken breasts!

Ingredients (3 persons)
For the chicken:  2 tablespoons minced fresh cilantro  2 1⁄2 tablespoons fresh lime juice  4 (6-ounce) skinless, boneless chicken breast halves, cut into cubes  1 1⁄2 tablespoons olive oil for cooking  salt and pepper to taste
For the salsa:  1 medium-sized tomato, chopped  2 tablespoons onions, chopped  2 teaspoons fresh lime juice  1 avocado, peeled and finely chopped  salt and pepper to taste
Instructions
For the chicken
1. In a large bow, combine all the ingredients except for the oil. Toss and let stand for 3-5 minutes.
2. Add oil in a pan over medium-high heat.
3. Add chicken and cook 6 minutes on each side or until done.
For the salsa:
1. Combine all ingredients in a medium bowl and stir gently to combine.
2. Serve salsa alongside the chicken.
