Fern Salad with Salted Egg

I got a first taste of this salad when I visited Majayjay Laguna few years back, it was love at first bite!

Time to prepare:

Difficulty: Easy

Ingredients (4 persons):

about 2 bunches of fern (get only the tips or the young shoot)3 salted eggs1 red onion, sliced5 pieces of red tomatoes
For the Dressing:2 tablespoons of vinegar (use apple cider vinegar or balsamic vinegar if you have)5 tablespoons of olive oilsalt, pepper and a pinch of sugar

How to prepare:

1. Wash and clean the fern tendrils.


2. In a casserole, put a lot of water with some salt and let it boil. Add the fern for blanching (remove after 7 to 8 seconds) and put immediately in a bowl of water with some ice on it. Drain and pat dry.


3. In a salad bowl, put the fern leaves, sliced tomatoes, onions and sliced salted egg. Toss the salad together with your dressing. Serve chilled.
